Recently, I was asked if we had any gluten-free and dairy-free desserts. My gluten-free chocolate chip cheesecake came to mind. However, it isn’t dairy free; so, my mind began to turn. That evening, I thought of some traditional Amaretti cookies that were perfect – both gluten and dairy-free. When making tiramisu, I don’t use the egg whites, so I had some left over. I beat them, added almond flour, sugar, vanilla, and Amaretto and baked them. Amaretti are delicious, traditional Italian cookies that are crunchy on the outside and chewy on the inside - a dream! They are so simple to make, and they also fulfill the need for a gluten and dairy-free dessert.
I am always thinking about my customers and how I can create desserts and entrees with variety and excitement. In 2019, I'm going to examine our menu to see how we can create more options for people with special dietary needs. We appreciate and care about the needs of our customers, and enjoy trying new things in the kitchen.
